Bread Shares

Small World Bakery, who we partnered with last year to bring you a Bread Share add-on, has been working on some new recipes: in addition to last year's artisan loaves (Pain au Levain, Sourdough Rye, and Country Multigrain) I'm excited to let you know you'll also get access this year to Sandwich loaves! There are 3 kinds: Jewish Rye, Poppy Seed, and Honey Oat. (See below for ingredients and descriptions). All the sandwich breads will be baked in loaf pans, so that they're a better shape for sandwiches, and will have a little bit closer of a texture so there aren't big holes that your mayo falls through.

Since there are 6 different loaves to offer and we're not a big enough market for the bakery to dedicate an entire bake shift to the farm, the bakery won't be able to bake every kind of bread every Pickup day. So instead, we're offering 5 different Baker's Choices this year. But first let me describe the different loaves we'll have:

Pain au Levain: This is your classic French sourdough with a nice chewy texture, robust crust, open crumb, and a mildly sour flavor. -ingredients: water, white bread flour, white all purpose flour, rye flour, sea salt.

Sourdough Rye: This hearty, crusty loaf is dark and dense with great rye flavor. There are no caraway seeds in this rye! -ingredients: water, whole wheat bread flour, whole rye flour, molasses, sea salt.

Country Multigrain: This flavorful loaf is a wholegrain sourdough packed with different grains and seeds. -ingredients: water, whole wheat bread flour, rye flour, oats, sunflower seeds, sesame seeds, flax seeds, sea salt.

Honey Oat: This is a nice and versatile whole grain sandwich bread. It's made with both sourdough starter for flavor, as well as a tad of dry yeast to get a little more rise. -ingredients: water, whole wheat flour, oats, rye flour, honey, yeast, sea salt.

Jewish Rye: A classic deli rye with caraway seeds. This one is not a sourdough, and is made in a loaf pan for sandwiches. -ingredients: water, white bread flour, rye flour, cane sugar, yeast, sea salt, caraway seeds.

Poppy Seed Loaf: This is a tasty sandwich bread made with mostly white flour, with the poppy seeds adding a nice crunch. -ingredients: water, white bread flour, white all purpose flour, rye flour, poppy seeds, honey, sea salt, yeast.

The different bread shares we're offering at Mud Creek this year are as follows:

Artisan Baker's Choice: you will get one loaf a week alternating between Pain au Levain, Sourdough Rye, or Country Multigrain. All these loaves are sourdough, free-form loaves baked in a deck oven.

Sandwich Baker's Choice: you will get one loaf a week alternating between Honey Oat, Poppy Seed Loaf, or Jewish Rye. All of these loaves are baked in bread pans, and have a closer texture that's better for sandwiches.

Whole Grain Baker's Choice: you will get one loaf a week alternating between Sourdough Rye, Country Multigrain, and Honey Oat. All of these breads are made entirely with whole grains.

White Baker's Choice: you will get one loaf a week, alternating between Pain au Levain, Jewish Rye, or Poppy Seed Loaf. All of these breads are made with mostly to entirely white flour.

Ultimate Baker's Choice: Do they all sound good to you? Get one loaf a week, alternating between all 6 different varieties offered.

Not sure what you might like? You can taste samples at Small World's market stall at the Rochester Public Market on Saturdays or at the Brighton Market on Sundays. Also, we'll be sampling out bread during our first few CSA share pickups, so you can decide then whether you want a bread share and which kind you'd like!
